    Best of the West lump

Bought it at Sam's Club in the 40lb bag. I recommend everyone stay away from this lump. Not sure if I just got a bad bag or what, but this stuff is giving off a very strong fuel odor until fully lit (I mean completely burning). I do not use lighter fluid at all, so I know it's not coming...

Good pulled pork, good use of leftovers

One of our favorites is BBQ nachos. Similar to the typical Mexcian style nachos you see everywhere, but with the pulled pork twist. Nacho chips, PP, shredded cheese, bbq sauce, sour cream, topped with chopped scallions (even throw some black beans on if they are on hand).....very good and it...

    Help with PP overnighter.

25% on all vents is too much for my unit as well. I usually just barely crack all three which yields about 230F when the outside temp is around 30....This is just the way I like to do it. At an average of 230 the 8lbr's take about 14 to 16 hours. Once i get up in the morning I can judge my...

    Grease spots on Performer deck...

Simple Green works very well for me. Spray it down and let it soak a minute. I don't think Star-San will cut it.

    New Toy - 2010 Performer

Brad, I had the same concerns about the charcoal. I also live in MO. I've had the Performer about 8 months now and never had an issue. A lot of the time my Performer is not even covered up and it sits on a wide open patio exposed to the elements. All I do is roll up the top of the bag and...

    How many bags of Rancher?

Picked up a bag at Trader Joe's today. 18lbs for $6.99. The guy said they JUST got it in, which I belive since there were only about four bags missing from the pallet.

Kingsford with Hickory Yea or Nay

I've given it a chance a couple of times. I won't buy another bag unless it's REALLY cheap. No, I couldn't smell any wood smoke once ashed over.... Plus, I really didn't set a stop watch or do a controlled experiment but it did not seem to burn as hot and/or long (depending if I was using it...

    Looking for a recipe

If I had to guess I'd say Dave has it. I make a big batch of Keri's sauce about twice a year. It gets great reviews when I put it in a squirt bottle next to the pulled pork and call it "Butt Sauce".

    Labor Day Weekend, Who's Smokin?

This weekend will probably just be doing pork steaks on the Performer. A local grocer has pork butt on sale for $0.89/lb so I will buy several. The family is coming to visit in two weeks. Can't feed the herd any cheaper than that and it's a good excuse to do an overnighter. No plans for the...

Is it necessary to "season" the WSM before cooking with it?

Like others said, I washed the grates. I'm sure there is some sort of machine oil or something on them. I used about a half chimney of lit, no water in the pan and just let 'er rip wide open the first time. This was 1) to "break it in" in my mind because I know from experience the Webers run...

To answer your question: No, it does not prevent water from pooling up on the table.

Am I missing something? Around $20 with shipping does not sound that bad to me.

    Number of charcoal starts??

HOLY CRAP Tommy!! Lets break this down: 5 years, 52 weeks per year = 260 weeks 260 weeks times 2.5 starts per week = 650 starts!!! 650 starts divided by 5lbs = 130 starts per lb of propane!!!!!!!

    Number of charcoal starts??

Thanks Mike, that helps. I was thinking if I could only get 6 or 8 starts then it would be worth converting to a larger tank, but there's no way I'll stick a big bulky tank on there if I can get 20+ starts from a small disposable tank....Sometimes I can find them for 2 bucks. Thanks again.

    Number of charcoal starts??

I'm in the market for a new Performer and was wondering how many starts you guys gets from the small one pound disposable propane tanks? I'm thinking it must not be too many since i see many threads about converting it to fit a 5lb or even 20lb tank. Thanks much

    July 4th Smoke - What's ya cookin'?

That is one beautiful bird. I found butts on sale today for 97 cents/lb at a local grocer. Got home expecting a huge hunk of fat to be hidden under neath. To my surprise they were trimmed up just the way I like them, I think I cut maybe a quarter pound of scrap off of 4 butts....Sorry, I'm...
