    First brisket and picnic shoulder

Andrew, I live in the central Shennandoah Valley of Virginia. We have lots of nice breezes and usually a chil most nights. I think the humidity and temperature have a pretty large impact on an "all-nighter." It almost always takes 18 to 20 hours to get a butt at internal temp of 190 to 195 here...

What do you use for a work surface?

Steve, I watched the clearance patio tables at Lowes, Sams, Home Depot etc. Last year found a cheap glass table with dents for a song. I use this with old "car washing" towels under couple pieces of deck and molding pieces. Good luck!

Kingsford R&D lab trip report now available

Thank you Chris! Just now had a chance to read your report. Good information and a well done summation of the pros and cons for the new product. I had already purchased 200 lbs of the old before it was gone, so it may be a few weeks before I try the new.......Less pieces to start, and the start...

What do you do with the lid?

I always pull my patio table next to the WSM when I smoke. Use two short pieces of wood shoe modling had laying around the house. ALso the table is good to work from with the NU-Temps and basing pots. In fact, I use the two moling pieces, and two more pieces of treated deck bords sawed in about...

    Got 2 Butts Going

Rusty, Pulling tonight would be best. I have place in fridge and re-heated next day. As for re-heating, I place in pan with water in bottom and let the steam from the water help moisten the heating up process. Can cover or not, with the water it can be done either way. If in doubt, always cover!

    Meatloaf and Maintaining High Temp

After removing 3 butts on Saturday, I had some good coals left. I added little more than 1/2 chimney Kingsford on the top. Place aluminum foil pouch with Apple pellets. Temps stayed at 340 to 360 with vents at 50% - Pan w/o H20. Outside temps at 58 light wind. Took about 1 hour and 35 minutes to...

    4butts???

Jeff, I have done 4 several times, and for ease of handling I place one larger with one smaller on the same grate. I usually keep them in the WSM for about 16 to 18 hours at around 230 degrees, so figure they will all hit 195 to 200 internal regardless of grate. When turning and sopping, I have...

    Cool Cooking....Need advice

After many successful overnighters on Mr Brown butts, I was just cocky enough to think I knew what I was doing until last night. Started the butts at 6:30 PM with 250 lid temp and three nice sized butts. Realizing outside temps were headed into the low 20's, wrapped a water heater blanket around...

    Long Cooks...Minion Method

Steve, I have always used MM with 30 or more in the Weber chimney, and full ring of Kingsford. I have found it necessary to add a chimney of coals somewhere around the 14 to 16 hour mark. I usually always have 14 to 28 lbs of Butts on both grates. I have used water (Brinkman pan) on each cook...

    Can't find Weber starter cubes

When using my gas grill to light the chimney with paper, lot of ashes fell into the body. Next grilling, they would lift up and get on my food. The cubes are my choice, but that is what works for me, I love the local news delivering the starter to your door every day/week! I think I'll try the...

Thanks for the tip Chris. I will definitely pick one up!

    Weber starter cubes

No doubt about it. Clean the store out of those starter cubes and you definitely got em for the right price! I "second" Paul's comments that they last plenty long enough and leave absolutely no residue, ash or any other leave-behind mess. Last evening I let 30 or more coals in my Weber Chimney...

    Cooking time for 4 butts

Steve, I purchased four butts 6 lbs each and two butts 4 lbs each. All 6 butts were trimmed, fat caps removed as well as bones from meat market in local town. (Harrisonburg VA). THey were netted. I placed two of the 6 pounders on each grate along with a four pounder. Began at 7pm (Minion method)...

How do you transport your WSM without a pickup truck?

Purchased a WalMart real bike platform that simply inserts into trailer hitch receiver. Wrapped water pan, and grates with old terry cloth bath towels, along with the weber chimney, inside the smoker. Use about 3 bungee cords to strap from the legs up through the handle. Place the Weber cover...
