    I wouldn't worry about the fire brick thickness too much. You're just using them to contain the coals and add a little heat sink to the kettle. Thick or thin they will contain the coals. The thicker ones will only give you more of a heat sink. Glad everything is working out so well. Fun, isn't it?

    I'm with Gary. I use to do it too but have gotten lazy. I think mopping can definitely add flavor, not sure it does much for enhancing moistness or forming the bark. No matter, it sure looks great!
