    Sliced across the grain. Square white bread. Sliced onion sliced jalapenos pinto beans eithe potatoe salad or German-style potatoes Maybe some Stubb's Sauce. This seems to bethe standard for Central texas Q although the "purist" just say meat and bread or crackers.

    BABY BACKS

    Anthony, I di "Slow good baby back ribs with soo-wee sauce" from Weber's Way to Grill. Really good. I don't do bbs too often because I dislike the elevated price. Regular spares run about 1.39/lb arounf here BUT bbs go for at least 4 and higher.

    The BIG difference between the two is that the holder for the Perf doesn't allow the lid to clear the grate completely whereas the Slide-a-side does.     Isn't it the same lid holder? Have you thought about the accessory lid holder that fits over the edge of the lower half of the kettle.

    John, I usually add water when i lift the lid or a check. Use a garden-type watering can and pour it rightthru the two grates.

    I've got one of those adapters and 2 20lb cylinders. The thing Idon't like is not being able to put the cylinder underneath the table without removing the charcoal holder.Personal choice I guess.

    Pat, I thought of that. In fact,I gave my old Kettle away WITH the add-on you mentioned!LOL I ahte to violate my new Performer. I'll just have to wait and see how agrivating this situation is before I Get serious about mods. I would really prefer to make adjustments to the existng hardware.

    Anyone figure out a mod to get the lid o nthe Perf/OTG to slide a little further out of the way? I ahd the accessory holder on my old kettle and it would clear the grate.

    Slight change of subject, Any adaptoers to refill the 16.4 oz. propane cannisters? I ahve 2 20 lb cylinders that I use for frying turkeys,etc. I don't want to hook them to the Perf because it won't fit on the cart. I read somewhere here that such a thing exists.

    Won't do it until tonite. My wife was under the weather yesterday so I figured it would be better to wait. Nothing spectacular. Some boneless CBs,grilled onions and poblanos on flour tortillas. Want to be able to figure out ant differences in heat control between the Perf and my old Kettle...
