Lately what I've been doing is 3 hr cold smoke. Then a trip in the oven til 145. You won't imply too much more smoke with coals. Done this the past 2 cooks, turned out great.
Cut up a Fresh Side in 4 pieces.. 3-4 pounds each
Cured, in Brown Sugar and MTQ for 8 days... Rinsed, Overnight in fridge 10 degrees on a Christmas Morn.
They were delicious... Only thing I have to question, is the casing, it was a Hog Casing.. Natural, but had extra snap to it... Last time I don't recall that being like that
