Which grill to buy for grilling/smoking?

Don't forget that one benefit to the WSM, other then the fact that it is a great "smoker" is that you can remove the center piece and make a grill out of it. This would cover both your needs and when smoking you have one of the best backyard smokers around. If you plan on doing more grilling...

    Beef ribs help

Grant glad to see all turned out well-FYI I have never cooked beef ribs that took less then 5 hours and often closer to 6. It all depends on the thickness of the rib. I use the toothpick and probe test. If it goes in with little to no resistance its done. I don't think beef ribs will pull apart...

I Taught My Neighbor Some Thing New!

Right On Phil! I used to butt in but it seemed that more often then not the people here in Northern California were not very receptive to my advice. Especially when it looked to them like I was trying to "up-sell" them from a cheap gas grill to a Weber Genesis or Summit. Hell I didn't even...

I Taught My Neighbor Some Thing New!

Its funny-not to sound snobbish but you might say we have a duty to educate the novice outdoor cook. I cant tell you how many times I have been in the grill section of HD or Lowes and I overhear a couple discussing their future grill purchase. I so badly want to chime in with my "expert...

If you had $100 to spend at the meat market, what would you buy?

A Hot Dog. The way meat prices have skyrocketed lately that's about all $100.00 will get you. Seriously though, if it were me I would go with a Prime Brisket or Wagyu if available.

Dumb question about the Aaron Franklin Butt Video

Are you sure Franklin uses Kosher salt? I may be wrong but when watching the video it sure looks like table salt to me? The exact reason I like using my Stick Burner. I would rather take the wheel and drive the path then use the cruise control. to each his own. Not so on my Lang. My unwrapped...

Fat Cap UP, or Fat Cap DOWN?

Definitive answers to this question have always boggled my mind. To say always Fat up or always Fat down is to simple of a side in the debate to take unless you are all referring to using just the WSM. I believe that making BBQ requires decisions to be made that solely depend on the cooker you...

    Price to charge?

Exactly!! Its not gouging when you put all that time into making them delicious food. Cost X3 is the standard among caterers.
