    Water pan & Overnight Smoking

I am going to start my butts tonight on the WSM. I am going to use the minion method to start the coals and monitor for about an hour before turning in for the night. Spare Ribs $1.97 lb

I was surprised too. I thought he would say no. It will still take some time to do the rest of the trimming. I also saw that there were on sale for $1.99 at my local Kroger grocery. They will usually do anything you ask them too. I may stop by there this afternoon and give it a try!

    Spare Ribs $1.97 lb

Picked up spare ribs for $1.97 at my local Sam's Wholesale. The butcher even did part of the trimming for me for the St, Louis Style. I still have to remove the skirt and the membrane. Thought that was a good deal. I have never had spare ribs. Hope they are as good as the loin backs I have...

    overpaying for Butts

I agree with the phrase, you get what you pay for, but at the same time, the whole point of smoking "low and slow" is to take a lesser cut of meat and making it fabulous. That is what I like to do. Besides, a little fat in a butt goes a long way in the smoking process.... Now, I...

    overpaying for Butts

Wow, so you are ending up paying $120-$160 for 3 butts....I'll stick with my 99cent per lb butts I get at my grocer. I know they are good. I will save my money for a beef tenderloin for Christmas! Hope you enjoy. I look forward to reading your post once they are done!

    Decisions......decisions

I agree...buy the whole spare. It is not that much trouble to trim and you say 1/2 the price! Plus those other cuts can be used for so many other things. I love to take leftover smoked meat and add to my soups in the winter. Makes them much better!

the ever popular water pan question

Is there a preference for either clay or water when doing an overnight smoke? Would the clay overheat and let the temp get too hot during the night?

    Side-by-side: BGE-WSM Overnighter

I am so glad you posted this. I wanted to BGE and could not justify the price. You also pointed out several other things that would irritate me..Capacity and no easy of adding fuel. I am now even happier with my WSM. Also, it goes without saying that the people on this site make the WSM a...

Meat for Sale out of Truck

I had some tool approach me and another lady when I lived in an apartment complex in Nashville. Really pushing chicken. Wanted to come into one of our kitchens and microwave a piece of chicken to see how moist it cooked up in the microwave. That was enough to turn me off right there.
