yet another brinkman charcoal pan question

Those small aluminum Flanges will hold WAY more than the weight of two gallons of water. Don't worry about it.

    New way to soak chips.

I got a plastic cup (w/lid) from the NC ZOO when I ordered a drink. I've been using it for more than 5 yrs to soak wood chips in... Still works fine. No need for replacement. The tall shape of a cup does keep almost all chips completely submerged.

    Weber Charcoal Chimney

Now there's a thought. I'll try that. Thanks, Morgan. I've actually thought of modifying my smaller 'off brand' starter (that I hate) to be more like the weber. Using some wire screen to form the conical bottom to let more air get to the charcoal. It would just be easier (for me) if they...

    Weber Charcoal Chimney

I wish Weber made a 1/2 size version of their charcoal chimney. The quality and how much better it starts charcoal is unbelievable. But it is just too big when only wanting to lit 12 -16 chucks of Kingsford for the Menion Method. WEBER... MAKE ME A SMALLER ONE!!!!

    New Book: Weber's Real Grilling

Chris, I looked at it in the book store over the weekend. Didn't have time to give it a good 'in depth' look. But it looked like it would be a good book to have if you like doing the more gourmet grilling. Very comperable in looks to a Williams-Sonoma type grilling book.

anyone put a brisket in a cooler?

Yeah, you've got to do the cooler thing. Heat a few fire bricks and put in the cooler with the brisket. It will stay hot a long time.

    thermometer?

The Weber replacement thermometer works well. And some (mine doesn't ) have the big Weber logo on them. That adds cool factor.

    Weber Charcoal Chimney

I would guess the reason that you don't get any noticeable smell or taste on your food from the starter cubes is because it is gone before you put the charcoal into the cooker or grill. And it is such a small amount to start with. With lighter fluid it is soaking into the charcoal and probably...

    Brookfield Farms Brisket ?

Are you wanting to end up with Smoked Corned Beef, or Pastrami? If pastrami, see Larry Wolfe's post or Chris's cooking section of the website.

    Mock Pastrami

Larry, Think I'll just stick with corned beef (and Guinness) and cabbage for St. Patty's Day. Don't want to mess with tradition. Do the pastrami after.

    Mock Pastrami

Looks and sounds good Larry. I been doing a lot of reading lately about making pastrami on different sites around the internet. It's about time to just do it.

Native wood in Iraq suitable for smoking?

They grow date-palm, citrus trees, grapes and stone fruits. Any of these should work.
