    First practice chuck roasts - advice?

    Funny, just yesterday I let the wife talk me out of smoking a chuck roast. I ended up making it in the crock pot. Nine hours in the pot and it simply fell apart as I took it out. Much better then the last time I made it. Reading through this thread I wish I had smoked it though.

    I'm dieting too. I don't get the chance to BBQ as much as I'd like because of time (although I grill lean meat as much as I can) so BBQ is more of my "cheat" day(s) every few weeks. I'm definately going to be smoking a salmon sometime before the weather gets too cold.

    A couple questions about my chuck eye roast

    Agreeing with Jim and Larry here. 90% of the meat we buy gets frozen at one point or another before I get a chance to cook it. We vacuum pack all the meat when we get it home and throw it into the deep-freeze until a couple of days before we need it.
