    First BBQ Charity Event

I wanted to post an update on this. The charity event was last Saturday. Great weather, 8 other teams that were a lot more gung-ho/competitive that I expected and about 500-600 people. I cooked 42 lbs of butt and brought 27 lbs cooked (67% yield was much higher than my usual 52%). I packed...

    Need some un-waxed butcher paper?

Amazon is now selling "Pink Butcher Paper Roll 18" X 150' in Durable Carry Tube" by Oren International. I then bought a roll paper cutter from the Web Restaurant Store. I will let you know how it turns out.

    Smoke wood and allergy

Wow. In my youth, I ate plenty of tree fruits (apples, peaches, pears, cherries) and shellfish (blue crabs). My late father's passions were gardening and fishing/crabbing. Some time in my late teens/20s, I developed a mild allergic reaction to the fruits (itchy, swollen mouth) and occasional...

Replacement Parts for Silver Genesis B

Hello Alejandro, No, this is the catch pan which is in surprisingly good condition. I am looking for the drip pan, the larger removable pan underneath the burners (comprises the bottom of the grill) that the catch pan is connected to. Also one of the metal railings that supports the drip pan.

Replacement Parts for Silver Genesis B

During my annual cleaning, I discovered my drip pan has a hole and one of the railings has rusted out. I believe I bought the grill in '99. Where can get replacement parts? I suspect I may have to buy something on CL and scavenge it for parts...

    Boston Butt smoke

This works for me. I've also smoked with the fat on top. I really can't tell the difference.

Hello, I posted this thread in the BBQ forum a few days ago. I got plenty of looks but no feedback. Can anyone provide any insight? Thanks,

HELP!! How do I Remove A Stuck Lid

Hello Jerry, Thank you for the idea to get the center section true round to fit the lid better. As I mentioned the lid never fit the center section well, even out of the box brand new. My last smoke was in April and there was no dried grease/crud build up on the lid nor edge. It was...

    First BBQ Challenge for Charity

My arm got twisted to volunteer to cook BBQ for a charity event in Alexandria, VA on Sat 27 Sept. This will be my first ever cook for charity, attendees pay $25/head or $55/family to sample the various BBQ offerings. I plan to cook pulled pork the night prior/morning of the event and recruit a...

HELP!! How do I Remove A Stuck Lid

I started a smoke a hour ago (0845 EDT); 35 lbs of butt to stock the freezer. My 22.5" WSM lid has never fit well but when the center section heated then loosened up, it popped in. I forgot to insert the ET-732 food probe so I tried to remove the lid but it will not come off. I had a same...

    Your favorite Steak cut

I grew up eating pan-seared chuck roast cut into steaks. My father had a way with a large pot (to contain the oil splatter), vegetable oil and plain ole S&P. It was simple and delicious to a 10 yr old. I still do that but will buy ribeyes and NY strips with the ribeyes winning out.

    Plan B for lighting coals

Snail mail junk mailings is a good alternative to newspaper. I will try soiled paper towels from wiping CI pans. That is a great idea. I have the handheld torch head. It is a $35-40 solution to a penny problem. But if you have one, it does work pretty well.

    Lazy pizza

Hi Nate, I had the same problem the first few times I made dough. Maybe I used too much liquid, not enough corn meal or not enough dough for the size of pizza I wanted to make. I caught it early enough so I just folded the pizza in half and made a field-expedient calzone...

    Pizza again

Hi Nate, Thanks for the recipe. "Makes three 12-oz dough balls".... That is a tricky statement. How much dough do you use for the pizza crust that covers your stone? NY style pizza? So the crust is thinner but you are able to fold a slice which is characteristic of NY slices? I took my...

    Pizza again

Nice. What diameter is the stone and can you post your dough recipe? Using my dough recipes, I'm not able to form a crust to cover a stone that big. That looks to be a 16" stone, right?

Any Experience Using Infrared Surface Thermometers for Grilling?

I saw this Maverick thermometer in a news article for "10 Great Gadgets for Summer Grilling". I love practical, effective toys but I can't see how it can measure internal temps. Anyone have first hand experience using toys like this? Thanks. :)

    Cracked Stone Sheet on Grill

I did scrub and rinse off some loose ash, wiped it dry then pre-heated it. I got distracted so it was heating for at least 12-15 mins before I placed the steaks on it. I pulled it out of the trash and read their website for warranty. I could not find the "L" symbol on the back of the stone...

    Cracked Stone Sheet on Grill

Really? I need to dig it out of the trash.... I hope it did not crack more when I dropped it in there.
