Brisket - hot and fast - question

I was reading Myron Mixon's book "Everyday Barbeque" to see his recipe for Brisket. He calls it "easy brisket" use a 5 pound cut and trimmed point, and he says to get the smoker, in my case my 22.5 unless a 5 pound point will fit on the 14.5, and then put it in a aluminum pan uncovered for 1...

    14.5 vs 18.5

I am on the way out the door and can't straight right now, but there are several good threads on the 14.5 here Real quick, the 14.5 is susceptible to wind, more than the 22.5 I have but with a windblock even a jury rig one works fine. With the Brinkman racks you can 2 two racks of ribs cut in...

    14.5 vs 18.5

I have a 22.5 and built a mini, I have to admit I bought the 14.5 because it looked great. My mini is almost as good but the door on the 14.5 makes a big difference. I have two problems, one I am usually only cooking for me as my wife doesn't like smoked chicken which brings me to my second...

Performer - new vs. used, or should I?

Decided I don't need the performer having the OTG I barely use. Since it has the clip on table to hold the thermometers for the WSM 22.5 and I had built the rolling table for heavy duty work. The rolling table is really nice, now if I can just get my patio level!

    restyle WSM

I went one better especially for cooking in the rain. I took my picnic table umbrella and put in some PVC to hold it and it covers whatever WSM I am cooking with.

Performer - new vs. used, or should I?

I currently have a OTG 22.5 with a snap-on Weber table. I really don't use it much, about 2 or 3 times a year, use the Silver B and my 2 WSM's all the time. I am looking to get a sturdier table to have between my OTG and WSM. At the same time the new (or new to me) grill bug has bitten me...

    Wind shield

I have had the water heater "blanket" up against the WSM touching it when it was running 325 no problem no melting

    Smoked/fried vs Oven Baked Turkey

Depends, my wife doesn't like smoked chicken or turkey, hence the oven bird, the skin was best on the oven bird! Which one was better, I have to say the smoked one. I went a bit heavy on the smoke as it was orange wood, but it was very good. Had to scrape the snow off the smoker!

    Smoked/fried vs Oven Baked Turkey

The wife insisted on turkey smells in the house, so I did one 11 pounder in the oven and the other on the smoker and for the last half hour I tossed it into the Char-broil oil-less fryer. So I didn't have to =try to stuff it hot into the fryer basket I simply cooked the whole thing in the...

    Second lid vent 14.5

I had trouble getting to 350 and tried putting a small screwdriver to prop the lid up just a touch, viola! 350 for the 90 minutes for my chicken. I was using KBB and got 350 the chicken came out great

First Roast, cost of meat, ouch

for us 40 is warm, tomorrow it is going to be hot, low 50's but than back to the 20's. I sat outside watching the WSM for about 20 minutes while talking on the phone. Well everytime you make a mistake it is a learning experiance. Now I can know I can get really high temps if I need them in the...

First Roast, cost of meat, ouch

14.5 was running about 275 with KBB and wouldn't go higher, which is what I expect of KBB, put a bolt under the lid and came inside, that should raise the temps. The wife just told me she sees a ton of smoke, the 14.5 spiked to about 375, caught it after about 10 minutes or so, won't hurt may...

First Roast, cost of meat, ouch

I was going to try cooking some beef short ribs, I really like them but then I looked at the price, $9 a pound, ouch I wanted some red meat and I saw the cheapest thing was the chuck roast at $6.50 on sale. It is warm here today, 40 degrees but the wind is about 20 mph. I rubbed the roast and...
