    Basic steak on the grill

For what it's worth... I went from using nothing to using S&P, and now I'm a big fan of using different rubs. I don't have a favorite rub so I'm always trying new ones and like Kevin wrote, I have noticed that some don't handle high heat too well. After I spread out the Kingsford, I place 3...

    Icebox Lemon Pie

Glad it worked out and I should've mentioned the freezer part. Try using other fruit juices. I'm still working on that pecan cake recipe.

Put meat in pan, or on grate?

That's what I meant...the grease dripping from the grate into the water pan and thus the mess.

    Pull then refrigerate?

Thanks for the advice Kevin and Doug. I think I'll go ahead and pull it then refrigerate it, but more than likely, I'll do an early a.m. cook.

Put meat in pan, or on grate?

Welcome to the WSM Family! You could always wrap the pan in foil...if that is the mess you're referring to. Also, you might want to go ahead and use your real name.

    Pull then refrigerate?

Okay, I'm doing 2 Boston butts on Friday morning for a party on Saturday--don't really have the time (or energy) for an overnight or early a.m. session. Should I pull then refrigerate, and reheat or should I keep the butts wrapped, refrigerate, reheat, and then pull on Sat. morning? I pulled...

Ok, tested Alton Brown's suggestion last night.

    New way to soak chips.

Ok, tested Alton Brown's suggestion last night.

You could always use my father's method: fill the chimney starter with coals then soak them in lighter fluid!

    Cooking butt at 300 degrees

Appearancewise, it looks nice with a good bark forming (or formed). I just basted them with apple juice and the lid temp. is at 250. Internal temp. is 168.5 (I checked in several places and it measured 165, 168, 170, 171). UPDATE:As of 1 a.m. I am done pulling. As I sampled, some pieces were...

    Cooking butt at 300 degrees

I think it just ran too high from the start and I just assumed it would drop. I've almost shut off the bottom vents and added some more water (using WSM pan) and the temp is now about 260.

    Cooking butt at 300 degrees

Thanks for the response Doug. I'm still trying to get it lowered, but it's not falling fast enough. I was just wondering if I can't get it dropped fast enough if it would turn out poorly. I have the ring filled to capacity using the Minion Method.

    Cooking butt at 300 degrees

The search option doesn't seem to be working (I know the site was going through an upgrade). Two Boston butts have been on for about 3 hrs. I was gone for about 1 1/2 hrs. and the temp. was about 300 degrees. I figured with the wind and the temp. dropping it would fall a little. When I got back...

    Icebox Lemon Pie

Okay, I actually don't use the term icebox but that's what I was told it was called. For a no mess, no bake, easy dessert: 1 can of frozen lemonade 1 can of sweetened condensed milk 1 container of cool whip 1 graham cracker pie shell Mix first 3 ingedients and pour into shell. Refridgerate...

    best meatloaf sandwich?

I just smoked my first meatloaf and followed the instructions on the cooking section. I used apple chunks and it cooked I guess about 1 1/2 hours. Probably could've taken it off sooner because it was slightly dry. The kids liked it and that says a lot.

    Weber Charcoal Chimney

I gave my father a chimney starter for Christmas. The last time I talked to him, I asked how he liked it. "It's great. I just have to use a little lighter fluid than before." Oh boy...I of course had to explain the whole purpose of using it.
