Where does your HM live during a cook

Almost done (again) and should be Heater Metering for my next cook. Where do you all have your HM during the cook. I have an 18.5 WSM and usually just hang my ET-73 on the lid lip or sit it on a table beside the smoker. Any elegant solutions out there suitable for this temp controller? Todd

    3D Printed Barrel Servo/Fan

Thanks Tom. I went back and found it after I knew what to look for. Were you ever able to confirm that the diameter of the mounting hole in the UDS version is 1 3/8"? [EDIT: I finally learned how to measure in my free Netfabb software and it looks like the standard diameter for the UDS mounting...

    3D Printed Barrel Servo/Fan

I have the files for the UDS version of the offset design. It doesn't look like there's a port for the ethernet jack. Is that right or are my 3D navigation skills worse than I thought? Also, has anyone used the UDS version? I'm mounting this on an 18.5 WSM and figured round would be easier to...

    HM v4.1 3D printed case

My 3D printing shop quoted me around $33 for the MakerBot PLA at "regular" settings (low infill, raft, no supports). Is that in the ballpark? If a cajoled one of you 3D printer owners to print one to sell, would it be less expensive after shipping? I'm not trying to skimp I just have no idea the...

    HeaterMeter with laptop

Ahhh ... another Kal convert. I'm sllooowly moving to make my pots electric/LP convertible and have plans to build the PID controller at least for the HLT. Anyway ... back on topic ... thanks for the info. I like the part about .."other than the impracticality of the finished solution." So, I...

    HeaterMeter with laptop

I'm just digging into this and have a question about the computer side of the build. Has anyone tried to substitute a Linux laptop to take the place of the RPi? I have done this with an Arduino Uno for a beer fermentation controller using the BrewPi software and didn't know if the HM project...

    HM v4.1 3D printed case

I'm jumping into the middle of this and being lazy by not scouring the threads a little more. I'm confused about the 2-wire/4-wire aspects of the case. It seems like the 4-wire version is the default but the .stl files are named 2line-BOTTOM.stl and 2line-TOP.stl. What am I missing? I'm just...

    Whole Chicken Questions

I'm going to try this for my next whole bird cook. It looks interesting and sounds like something you shouldn't say around the kids. Naked Whiz has a how-to at http://www.nakedwhiz.com/spatch.htm. Todd

6 butts, 18.5 WSM, unsatisfactory results

Bill, sounds like the perfect cook. That's how my 2-butt cooks usually come off. Hopefully, I'll be able to get back in the groove this weekend with an intermediate 4-butt. Todd

6 butts, 18.5 WSM, unsatisfactory results

.....what temp are you cooking at? I'd have to assume >275 for that timeline. My cooks (smaller load, maybe 2-4 max) always seem to take 16-19 hours. I like to use 225 as a soft target. The 250 temp would be to allow for the heat sink effect of 4 butts. There are folks who routinely cook...

6 butts, 18.5 WSM, unsatisfactory results

Again, great feedback on this topic. The 'cue from the dreaded 6 butt smoke has received great reviews so maybe I was a little paranoid about too much smoke. I'm getting ready to get back on the horse as it were and have a 4 butt smoke lined up for this weekend (maybe 2x4 butts back-to-back)...

6 butts, 18.5 WSM, unsatisfactory results

Dave, my top and bottom racks cooked pretty evenly. I had a probe in the top middle and bottom middle butt and they were always within a few degrees of each other. I use about the same amount of smoke wood (4-5 "pool ball" sized chunks of hickory). A windbreak would have helped as the air temp...

6 butts, 18.5 WSM, unsatisfactory results

Great points guys. Next time ... lose the saucer, let the cooker heat up a little more, and keep it at a higher temp. I grossly underestimated the thermal mass of the meat. I'm doing these large amounts for a fundraiser (I'm vacuum packing and freezing). I may do another round for Thanksgiving...

6 butts, 18.5 WSM, unsatisfactory results

Pretty much 220-225 until late in the cook when I had to add more coals and was trying to get things moving along. I use the clay saucer water pan mod. I get nervous about runaway pit temps so I really like to catch the pit temp and bring it up slowly. Maybe that's part of the problem. Should I...

6 butts, 18.5 WSM, unsatisfactory results

I tried to do a mega-smoke this weekend. Usually I cook two butts at a time. This time, I tried six. They were all around 7 pounds. I'll spare all the details unless someone is extra curious. The bottom line is that the meat was on for about 17 hours before I had to start taking it off and...

    vacuum bag / roll size

I've ordered a Weston 2300 vacuum sealer and was wondering what size bags or rolls to get. For now, I'm going to be putting pulled pork into 1 - 2 pound packages. Anyone got any suggestions as to an optimal size or combo pack? Thanks. Todd

Piedmont red slaw (the anti coleslaw)

I haven't seen this discussed as a recipe yet so here goes. It is a necessity for me to have with pork BBQ but also works well has a hamburger or hot dog condiment. Personally, I think that even uttering the words cole slaw when there is pork on the smoker is a travesty. 1 head cabbage (grated)...

charcoal grate 3 in 1 mod

I've got a friend visiting this weekend who is an ex-welder turned farmer. To keep us out of too much trouble, I've beg, borrowed, and come close to stealing the equipment and supplies to weld up the steel for the 3 in 1 mod. It's an overkill thing for sure but we'll have some fun melting...

    ET-73 comments

I posted earlier that my Maverick Redi-Chek ET-73 arrived during my jerky smoke the Saturday before last. I put the thermometer into service then and was disappointed with the range of the wireless signal. I read all the posts here regarding the antenna issues. I cracked my receiver open last...
