    Pizza crust

I have the large green egg pizza stone, I love it. I actually put my stone in the oven to preheat for 30 minutes. I then place it on 3 cans, to elevate the stone. By the time put the pizza stone on the grill I have 2 pizzas prepared and ready to go. I use corn meal. The k goes around the...

    Burger rub?

I use fresh ground pepper and a thick crystalled salt that they sell at a spanish super market, the salt is from brazil and argentina. I received the tip from a brazilian churrasceria, I think it makes a difference. I like montreal steak season as well. A local food truck here in town has a...

    Learning to barbecue

I agree with Gary. So long as people want q thats great no matter how they achieve their goal. I have an atc which I use on long cooks but I also know how to control my wsm. Its a hobby for me and the atc is a toy like bear claws, a thermapen etc.

It sure has been awhile, questions about a party for 60

I'm doing my annual tailgate this weekend. I'm doing a party for 60 people mostly adults, I would say 10-15 kids. I have already prepared 19 lb pre-cooked butts that are sitting the freezer, I guessing I have 11.4 lbs cooked pulled pork(40% reduction). I plan on doing some spares as well. I'm...

    AUBER CONTROLLER FOR WSM

No mine is not. I would take a video of the boiling water test using the auber and comparing it the 732 and email it to Suyi.

    AUBER CONTROLLER FOR WSM

Auber c/s is the best. Email Suyi, they will probably send you another one. Your the first person I have encountered that has had problems. Sorry you have had such a bad experience. Aside from my prior post try the clay saucer.

Low and slow brisket (with pics)

Very nice! Any pictures of the brisket being cut with the smoke ring, those are my favorite.

Wood chunks - to soak or not to soak?

I soak chips, I do not smoke chunks. There is very little water penetration unless they sit in water for days or weeks.

    AUBER CONTROLLER FOR WSM

Are you happy with the result and performance? Looks like you had some temperature swings there. I would suggest trying the clay saucer, it will run tighter. I have not experienced temperature swings like that with my Auber. Did you use auto tune or just set your target temperature? Have...

    AUBER CONTROLLER FOR WSM

Please keep in mind that both water and the clay saucer are both heat sinks but both behave differently. Water caps off at 212, where there is no cap for the clay saucer. It just controls the temperature a little more for you. The clay saucer works for me, I switched from water when I...

    AUBER CONTROLLER FOR WSM

Hi Jerry! Welcome to the forum fellow Central Floridian. I've had the Auber for almost 2 years and I have never had any problems with it. When I first got it I did have some questions and Suyi was great with response time and answer my questions. This is my method: I first fill up the...

    AUBER CONTROLLER FOR WSM

My Auber is accurate and I do not monitor the pit temperature. It does it for me. I set my alarm for +/-20 degrees. Usually the alarm will go off when it is -20 which tells me I need to add some K. I do not remember the last time I check but I think my spread was roughly +/- 3-5 degrees. I...
