    4th of July Cooking

    The cook will be on Saturday because the out of towners are working retail on the 4th. I am leaning toward spareribs for Saturday, the alternate is the Herb Crusted Boneless Rib Roast. That is as far as the planning has gotten. Something in addition to brew will happen on the 4th.

    digital scale

    Does anyone have any experience with a My Weigh i5000 scale?? This one will allow you to switch between english and metric during use, a feature that the bride has requested. (potential Christmas gift).

    Butts on, cooking too fast..

    Ron -- I do not trim the butts at all. When I am pulling (then chopping, this being NC) them, I work to clean the excess fat out from between the meat chunks. I am of the (uninformed) opinion that letting the butts cook longer causes more of the fat to cook out.

    4 PB ready to go

    I agree with Russ as far as using the sop. My pork butts (usually 32 to 36 lbs total) usually take at least 16 hours. I use an Eastern NC style sauce after the pork is pulled.

    What is best to smoke ahead of time

    If you are going to microwave it, I have had the best success using a low power (30%). I realize that you are giving up the speed benefit of a microwave at this power level, however, I find the heating more even.

    GREAT New Rib Rack

    Yes, thanks to Keri's original post, the Bride picked up two racks at the sale price. This looks so much better than the (Weber??) rack that I got at HD.
