The bacon's done, and here it is: Now it's in a bag in iced water cooling down. How long will it keep, and how should I store it? -Mark.

Wifey bought pork belly by mistake - What to do with it?

After all the votes in favor of me making bacon with the belly which my wife bought by mistake, my appetite was wetted and I was really looking forward to making some. I'm living in Finland at the moment, and I looked everywhere for curing salt but couldn't find any - I even went to a sausage...

I'll pass on a recipe if it calls for (blank)!! *****

I'll eat almost anything, so that's a difficult question. The kinds of things I would steer clear of are things that I don't often see in recipes anyway - like jellyfish and rat. -Mark.

Do you keep your grill outside??

I generally keep all of my grills outside, but I try to keep the WSM covered when it rains because I hate having the charcoal bowl fill with water. -Mark.

    ProQ Cold Smoke Generator

How did the cheese turn out? I noticed this video of the ProQ cold smoke generator: Video I wondered whether the candle is just used for lighting the wood dust, or do you have to leave it burning? -Mark.

I NEED HELP WITH SMOKING A TROUT!!!!!

I do salmon as well as trout quite often. I like to keep it simple, so I just rub the fish with olive oil and sprinkle it with a bit of salt and fresh dill. I set up my OTG for indirect with coals on one side in a coal basket with alder and a little apple for smoke. I then smoke the fish at...

    One more Q320 in Service

I love my Q320 for all the reason already given, plus it's so easy to clean. I just turn it on to high for a few minutes after each cook to carbonise all the leftovers, and every now and then I clean out the fire box with a plastic spatula. The fire box gets hot enough to vaporise drippings...

The nubs also hold the ash catcher, so removing them would have required a redesign of that. -Mark.

    Homemade smoker jacket

I'm going to use the jacket for the first time tomorrow. I just added 3 grommets to the top of the jacket, aligned with three holes of the top vent so I'll still be able to measure temperature with a probe thermometer throught the top vent. -Mark.

    Aluminium foil burning

When I use wood chips for smoke I wrap them in a heavy duty foil pouch and punch a few holes, and put it on top of the coals - Nothing unusual there. However, I've noticed that quite often the foil has burnt in places and turned to a white powdery ash. I wondered if this is releasing harmful...
