    Throwdown #17: Pork Tenderloin

No half-@$$, last-minute, "I was busy on the weekend" excuses this time. Hmmmmmm....I think I smell....bacon? To be continued....

    Insulating blanket/sleeve...

Here's a pic of Harry Soo's mini DIY WSM with a fiberglass welding blanket. He used it in Lancaster, CA when the overnight low was 38º. His fiancé, Donna, sewed on some velcro to secure it in place and altered the overall dimensions somewhat. I'm sure if you inquire about it on his FB fan...

    Silver Bullet Jacket and ATC?

I've used a welding blanket with an Ique 110 (38º overnight low in CA high desert) and it work fine. In fact, the heat retention is so good that the Ique should hardly run.

Eatocracy - Eat This List: 9 tips for judging (and winning) competition barbecue

Don't even discuss the weather, Bob. We don't want to lose our focus over here on our table! LOL

    The 2013 Jack

That's awesome! Left Coast finished 11th overall with a 2nd in sauce and an 8th in ribs. Who's Smokin' Now? was 9th in ribs. CA teams represented well...

    Throwdown #16: Tri-Tip

Wow. That's an extra lean piece of meat. No marbling at all! Huh. I'd like to see a lot more fat within the striations. As far as the outer fat trim, I'm fine with what he cut off. Fat on the outside isn't going make your meat any juicier and inhibits the rubs from bonding to the surface...

Leftover competition spare ribs from Lancaster, CA KCBS event

Well, when they were fresh off the pit they scored 173.1544 and 3rd place (just behind Slap Yo' Daddy's 173.7372 who was at the same table).

Vac packed, frozen, thawed & nuked. Still worthy of turning in. I outdid myself on these:

SYD - an entire KCBS Comp on a single 12" mini WSM

I hope to judge the 28th (have tickets to the Chargers home game on the 29th).

    Throwdown #16: Tri-Tip

LOL. That's pretty much true. I was a bit less concerned about angles and lighting than I was in the last throwdown since I was cooking in the evening with hardly any natural light. We eat with our eyes before we taste and appearance is the only way for us to judge. If better photography is...

    Throwdown #16: Tri-Tip

Reverse Sear Santa Maria Tri-Tip Here we go...finally. I picked up a 3lb. tri tip at the local supermarket and slathered it with a light coat of yellow mustard to act as a glue. Then, I applied a layer of both Simply Marvelous Season All and Susie Q. After I applied the rub, I put the tri...

SYD - an entire KCBS Comp on a single 12" mini WSM

No problem, Bob. I know there were a lot of places & faces you wanted to see, I'm sure. I'm glad you got to speak to Harry while you were there. He had a lot of curious visitors both days...and they were the other teams mostly. LOL

SYD - an entire KCBS Comp on a single 12" mini WSM

It was cool to see this in-person. I took my new 14.5 WSM for my chicken turn-in (14th overall...it was a tough table that included Big Poppa Smokers & Burnin and Lootin). Harry got a kick out of the new smaller WSM. He told me that he was going to buy a couple them. He and Donna also liked...
