    I've enjoyed using some Lowry's seasoned salt with some Montreal steak seasoning. It came out great, but I went overboard on the salt. I picked that up from some post here. I think next time I'll probably just do fresh ground salt and pepper.

    For those that installed casters thru the bottom of the legs on your smokers, any tips on centering the holes in the legs before drilling? I'll probably do this in my garage that isn't quite level.

    Source for nomex gaskets?

    Clean the areas real good with Dawn, hot water and a sponge. Once the crud is removed go over it with some Simple Green and a tag or towel. The surface should be clean and dry before applying the RTV silicone. I squeezed out the silicone in a bead and went back over it with an old tooth...

    Just put a gasket around my door -- now I can't get it closed

    You'll likely need a new sturdier door and latch. I'd suggest Cajun Bandit who also now sells the door per drilled with the Southco latch installed.
