    Performer vs. One Touch Gold

    Lance - Agree with all that is said above and would add that the height of the kettle on the performer is what sold me. It is so much easier to tend to your grill if you are taller than 6 feet as compared to the OTG. Go to your local hardware store to compare them side to side.

    RL. - I would think it was the wrap. I would just put the meat on and only foil when you come close to your desired temperature.

    Cleaning the table on the Performer

    Anyone have any tried and true cleaning ideas for the Performer table? I've noticed that the texture absorbs grease and although I get the surface clean the stains remain. Wish they kept the stainless steel design. Thanks, Mike

    James- Great review and I agree this is a good starter book, but what I like about it is the ability to expand my range of smoking options. I have a WSM which I have had for years and now with this book I can try smoking meat other than brisket, ribs and pork butt. Mike

    With my DigiQ is use no water, I use a double foiled piedmont pan. Perfect results all the time.
