    Tri Tip Experiment

    Here in San Diego we always have a choice of trimmed or fat cap on. Although once cooked we remove the fat cap, we don't like to eat that much fat. I fine for us there is more flavor cooking with cap on. As far as rubs or marinades, I use S P G that's all. I hope you'll try some tip soon. Bill
