    Ribs and sticks*

If you don't have a membership I'd be happy to meet you at the east end store and let you in so you can try it out before you get a membership. Their everyday price on most items is better than the sales elsewhere and the quality is top notch. This entire pork loin, including the rib end, was...

    Ribs and sticks*

It was baby girls 14th birthday on Monday and like any good daughter, when asked what she wanted for her birthday dinner last Saturday, her eyes lit up and she said "Ribs and Sticks!" Picked up 8 full racks of BB's at Costco for $80. Meatiest, nicest looking ribs I've seen so far this year and...

    Thermapen cleaning?

This is what I use too. You can get a box of a hundred, as listed above, for just a few dollars. Also good for cleaning surfaces before applying adhesive as the alcohol removes any oil that may be present and affect the bond of the adhesive. Something like this:

One thing (of many) that I've learned here...

I used a new recipe that called for 2/3 of a cup of salt to the same liquid contents of the recipe you linked a few weeks ago. I'll never do that again. I'm not even sure rinsing them and diluting the brining liquid will help  Soooo salty!

How big of a brisket on a 18.5 Ots

Totally agree with you. A big brisket can be shoehorned onto an 18.5 WSM because the coals are under a heat break, if you tried a big brisket on an 18.5" OTS you'd have at least half of it over the coals without anything to stop it from burning the meat.

First post on the new site, special occasion in more than one way.

So the backstory on this post is that 14 years ago I nearly died while backpacking in Algonquin Provincial Park. Two of my buddies hiked out to get help and the other one stayed with me until help arrived, in the form of the Canadian Coast Guard Search and Rescue Team. We don't see each other...

Friday Nite Ribs on Jordan Lake

Doesn't maritime law state that a cooker left on the beach with the ash catcher on board and appearing to be in peril is salvageable??

Salmon and Scallops - Weber Style

Hey Jack, I cooked the fish indirect at 350 until it hit 130 internal temp in the thickest part, then moved the foil over the hot coals to crisp up the skin (I love the skin, best part if you ask me!). I did make the sauce as well, softened half of a finely chopped shallot in EVOO, then added...

    Friday night Steak and stuff

I like a nice peppercorn brandy sauce on steaks from time to time...but for me it's usually butter and some creamed horseradish on the side. Thanks for the comments everyone!

    Friday night Steak and stuff

    Lamb Shoulder Extravaganza

Got my new British racing green thermapen today so I had to test it out! Pretty sure I took the temperature of just about everything I could get my hands on in the house when I first opened it up. Not sure how I lived without it... Now, onto dinner!! Marinated some lamb shoulder chops in...
