    Pork Butt

Looks great! I cook my butts to 205ish on a regular basis. I usually do two big ones in my WSM and I find I need it to get that high to get it the right amount of tender.

    Chops 'o Pork

For those that wanted to see some Thai BBQ inspired food, my buddy came over tonight to make us a Thai feast and we re-heated some of the pork chops and served them with Penang curry sauce. Thanks for your comments ppl, I appreciate them all!

    Chops 'o Pork

Looking for advice - how quick can you get going?

I have the Performer with gas assist. It takes about 20 minutes to get up to temp doing what others have mentioned by running the gas assist on a chimney for 5-10 minutes. What I've done is change my routine to compensate. 1. Give grill a quick clean from last cook. 2. Start a chimney of...

    Easter Prime Rib and Leg-o-Lamb

We're supposed to get sleet tomorrow and Tuesday, then the temp is supposed to start climbing...but it's only 39 degrees here right now and won't be over 50 until next weekend. Which is kinda weird considering how much further south we are than you are in Alaska.

Had the family over for Easter dinner tonight, its been WAY too long since I dug the Performer out from under all the snow. I don't think I've done anything on a Weber since before Christmas when I smoked my bacon because there's been 3 feet of snow on my back deck since then. I started my...

My First Go Round with Bacon

Making my own bacon before Xmas was the single best thing I did, cooking wise, in 2012. I'm nearly out of the full slab I did and I'm itching to make some more!
