    Turned out real good. Took 3 hours to hit 130 F. Not a lot of fat but tasted mild. Glad I didn't go nuts on the wood chucks. Mild smoke taste works well for this one.

    Let's see if this piece of meat is any good. It's 8.8lbs, rubbed it with Montreal and some other things plus herbs from the garden. Plan on 325 F on WSM later today. Wish me luck!

    Just did a tomahawk on the Performer with this stuff. Smelled clean to me, reminded me a lot of a Rancher Hardwood 100% Natural briquettes from many years ago (sparks like royal oak and the Rancher). I have to get more.
