Mark the liquid does not add any flavor to the meat its just to keep the bark from getting over done. I normally use 1 bottle of italian dressing and whatever beer i am drinking. I do add a lot of vidalia onions to the liquid.
Dave, i never use the lower rack to close to the fire with or with out the water pan. I only use the top grate for cooking. If i need more room i stack a grate above the top grate, plenty of room with the dome lid.
Cut up the cactus into bite size pieces, take some bacon grease and pan fry the cactus till done, then add some eggs and scramble all together for an awesome breakfast.
Awesome rig, i use mine 99% of the time. My WSM and my 2-22" kettles have not been used since getting my 26er. The 26er reminds me a lot of the 22 master touch grill.
Chris have you even considered getting the 26.75 kettle? Imho the 26 is the best overall grill Weber has ever made, it is basically a 26" master touch.
