Using the lower grate on the WSM

Gee, am I the only one that sees the obvious solution to this? The bottom shelf is supposed to have a packer brisket on it, with the two butts on the top shelf! Which is exactly what I'll be doing tomorrow night starting around 7pm. Long live the BOB cook!

    Forschner Boning Knife

Really like the Forschner's I bought recently. Following up on Todd's comment on honing a knife, does anyone have a video showing proper use of a steel? I've read it a few different times, but now that I have a semi-decent set of knives, I'd like to actually see it in action so I don't do it...

    Knife questions

I just ordered some Forschners this week from Cutlery and More and was very pleased. Ordered on Thursday about 2pm (central time) and had them here the next day. They provide free UPS ground shipping on orders over $59, and only a one day ship to Indy. Noticed they have a 10% off coupon code...

    pulling pork shoulder

I cooked bone-in for the first time last weekend, and no green in mine. Sounds scary to me.

    Is my BOB plan ok?

Timing turned out great on this one! On at 9pm, and brisket (185F) and the smaller of the two butts (190) came out at 2pm and went to the cooler to rest. Beans went on bottom shelf at that point, the other butt (187F) came out at 3pm, wrapped in foil, and went to 300F oven for about 30 mins...

    Is my BOB plan ok?

In anticipation of Smoke Day 2005, I want to check with the experts and make sure this plan off attack sounds good. 1 brisket, pre-trimmed weight is 12 pounds. 2 bone-in butts, pre-trimmed weight is 15 pounds. Goal is to serve at 4pm Saturday. Plan of attack: Noon: Trim and rub meats and...

    The elusive packer brisket

Thanks again to everyone for their suggestions. Finally made my choice and ordered with C & S Meat Market in Tipton, IN. Packer brisket for $1.89/pound, and 2 bone-in butts at $1.59/pound. Sam's wanted $3.23/pound for packer brisket. The one Sam's I visited had flats for $2.58/pound, so I...

    The elusive packer brisket

Thanks Jim! I'll make some calls in the morning. Any idea how many briskets are in a case?

    The elusive packer brisket

I asked at the one Costco, but not the other. Guess I'll try there again tomorrow. The guy I talked to at Sam's suggested I just put two flats together. Scary thing is I think he was serious!

    The elusive packer brisket

Trying to find some place in the Indianapolis area that carries packer briskets. Have been to two Sam's and two Costcos, and both carry flats for about $2.58/lb. Found a butcher in Tipton that says a packer will be $2.79/lb. Shouldn't packers be less $/lb? Any other suggestions on a place I...

    2-1-1 Baby Back Ribs

Going to try this 2-1-1 approach today. Would you start with standard method or Minion method? I was thinking I'd start with Minion method as it is easier to control on the way up, than to bring down the temps from a standard method lighting. After the 4 hours is up, just close all the vents...

    Broken Probe, now what?

I had the same problem when running the wire under the lid. In my case it allowed some moisture to get in the probe lead. I left it sitting on top of a furnace vent for a couple days and it was fine. I have since installed the eyelets from the bbqguru folks and run my probes through there.

Sam's Club or Costco? Which has the better meat prices and quality?

Yeah, real cute Mark I'm sure my father-in-law is helping you use it up as well as he's building a house in Hawaii as well. Enjoy it while you can, as I won't make the same mistake at the end of summer this year. You may want to start stocking up now as it will be slim pickin's this time...

Sam's Club or Costco? Which has the better meat prices and quality?

I haven't been to Sam's to compare, but have been pleased with the pork butt and brisket I have purchased at Costco. If you use Kingsford charcoal, Costco's price of just under $10 for 2 24 pound bags is hard to beat. Just wish they'd carry charcoal year round. Lesson learned--stock up next...

    ABT'S my version

Just chiming 2 cents in on the heat issue. Used to work at a Mexican restaurant that made stuffed japs. It was a lengthy prep process. First day we'd thrown them in the fryer for about 20 seconds, then take them out. Would then take the outter skin off under running water. Next, split them...

    Green Butt

Now this is making me wonder what to do. Picked up a brisket and a 2 pack of boneless butts at Costco last night. Plan to cook on Saturday, and planned on doing the brisket and one of the butts and freezing the other for another day. I do have a foodsaver to seal the unused one in, but would...

    Foodsaver recommendations

Anyone purchased the 1085 at Costco? Comes with 3 canisters, 2 rolls of bags, and 15 precut bags for $129.99. Looks like that is a pretty good deal for the number of items included in it. Correct me if I'm wrong, but hurry, this Christmas money is burning a hole in my pocket!

    First Butt!

Howdy neighbor! I just did my first cook this past Saturday in similar weather conditions (glad I didn't do it with all that wind on Sunday!). I had two 5 pound boneless butts from Costco on for 11 hours. I had water in the pan, and added water one time about half way through the cook. I...
