    No problem, I have done it many times for high heat and can get 3-4 hours easy and have coals left. I have the smaller/older 18.5" WSM which I use a Stoker with. If you're using briquettes, no issues either. I use almost all hardwood lump.

    I saw that blue one, and sent an email on Thrusday afternoon to try and meet with him. No reply, and it looks like the lid is dented with possible rust.     BTW, I've also seen Aaron Franklin use an onion cut in half, just stick the probe in at the height you want with the tip poking out of the onion to read the temp. EDIT: I just found this which ChrisA is using a potato.
