    HELP - Brisket done early

    Hi guys, My brisket (first one I've smoked) is done WAY early. I need to hold it for about five hours. I wrapped it in foil and currently have it sitting in the oven at 170 degrees (as low as my oven will go). I know I have to keep it above 140, but I've never held meat this long before...

    Wow, thanks for the great insight guys! If I recall correctly I threw 20 lit coals on top of the unlit. I'll dial that back to about 15 and I'll also not be so worried about the temp. I shot for a range of 240 to 250. Next time I'll shoot for 240 to 270. For what it's worth, both times the...
