Did some burgers on the Performer. Got the meat from a small butcher (about 45 minutes away), added habanero jack cheese with Havarti cheese (in the burger). Has to be medium to not be too gooey. Tasted good, wife liked them. All you can ask for.

Got the new KillaGrilla grate & rack in this past week. Have them on my Performer…LOVE them. Heavy duty all the way.

With the ArborFab charcoal basket, it will allow me to move the lower grate back up to the middle position (since the basket has a bottom and will rest on the tabs at the bottom of the bowl). I will be using my BGE ceramic half stones for any indirect cooks. So far I don’t care for the Weber...

Yeah, saw that one and also a version from arborfab.com (but this one is too big I think). I have sent an email to Arborfab asking about a custom fab-they claim they do that (a lot of other SS products on website). Never have heard back from kick ash baskets.

Well, dang. That looks perfect! So it looks like the charcoal chamber would allow a flush fit for another grate. From your description, that is a charcoal chamber from an 18” WSM ? I want to get another grate to cook low on the coals, then use a half grate on top and then use my upper deck...

I just like ‘holding’ the charcoal together.

I think they only sell them across the pond now. But yes, they are amazing. I bought a pallet from Lowe’s on clearance for about 3.00 a bag. Still have about 20 bags left. Been weening off them slowly on B&B charcoal, lump, etc.
