    Prime TriTip

Looks tasty! I found the same with the quality. I actually don't buy meat any more from Costco. I started buying from our grocery supply. Same quality meat way less expensive. I do have to plan though as its all bulk. That said the tri tip I get has 4-6 in each pack. So its easy for me too...

    Lemongrass Chops

Looks great! one of my favorite ways to pork. The local Vietnamese restaurant that I like has a dish where they take the grilled pork and coat it with panko and fry. So you end up with awesome bbq pork katsu style. You can request it in their Bahn Mi sandwiches, super tasty.

    New Discada

I have found that I too go to the blackstone first when it's set up. (mines the 22" so some times its in the camper). I have to say though that the versatility of the discada takes the cake. Kind of hard to use the Blackstone over open fire. Also not as easy to deep fry with.

    New Discada

Looks good! Show us some more of your set up! I have the propane burner that I made out of a tire wheel. But lately I've been flying mine using my tripod that I built out of black pipe.

    Corned beef Season

I used to make my own pickling spice but the last several years I've become lazy and get a big tub from the restaurant supply.

    Corned beef Season

You can smoke either. The point is more forgiving though for a long smoke as its a fattier cut. Sunce you havea a pre-corned piece, cut a small piece off and fry it up and taste it to make sure its not too salty. Store bought corned beef is notoriously too salty. If its too salty soak the...

    Corned beef Season

Yep its that time of year again. Picked up a 12.7 pound brisket from our restaurant supply. $4,79/pound this year so up a dollar from last year. Did the normal cure using digging dog farms cure calculator. I trimmed up the brisket and separated into the point and flat. As is the norm I...

    Taco pie

Yeah this was I needed it done quick. So indoors it was. Iy can be made in the Weber or a smoker though. We've made it camping. Even have made it in the Dutch oven.

    Taco pie

Always a crowd pleaser. Pillsbury taco pie. We change up the filling a bit. I have also found that two cans of crescent rolls works better. Filling: 1 pound ground meat ( used bison this time) 1 onion chopped. 1 small can diced chilis (I used hot hatch) 1 can refried beans ( used black bean)...

    Almond flour waffles

Well so far I’ve been pretty lucky. I let the iron really heat up 30 minutes. My stove goes 0-10 and I set it on 4. Flip the paddles every five minutes. After thirty minutes I flip one more time and drop to 3. Spray with PAM. Then fill. I do 2 minutes then flip. For a total time of 8 minutes...
