    Spatchcock That Bird

Another tip from ATBBQ that I use is take out the wishbone before coking it. It’s easier (for me, anyway) to process the breasts without the wishbone in the way. But I’m definitely a proponent of spatchcocking, and good shears help.

    Searwood - Yea or Nay?

So, after taking in and appreciating all of your comments, watching countless videos, and reading any reviews I could get my hands on, I've decided to purchase the Searwood 600. I was able to get my hands on a 600 XL, Campchef Woodwind Pro, and Yoder 640S which really helped in the decision...

    Costco Take and Bake Pizza

We’ve only done ours in the oven, but we’ve found the Costco pizzas to be very good. I bet yours on the smoker was excellent.

    Maple bacon

Meathead's method makes some good bacon, but I really like your bourbon-brown sugar glaze idea. That bacon looks great, especially as I sit here contemplating breakfast. Nice job.

    Do you want the recipe?

One could look at the number of threads and messages in the photo gallery forum compared to those in the recipe forums and surmise pictures get much more reaction. Personally, I prefer to see pictures of everyone’s cooks as it gives me ideas and thoughts on how I might have done it differently...

    I agree with your assessment.

    Searwood - Yea or Nay?

I agree completely. I plan to keep my kettles, gasser, and one WSM. I don't expect any pellet grill will cover everything.

    Searwood - Yea or Nay?

Thanks for the great response, Larry. I have a friend with a Req Teq and he's very happy with it. There's something about the Traegers that just doesn't click with me. I know some people that have the older models and had lots of problems with them. The info I have is that they are much...

    Searwood - Yea or Nay?

All good comments, Dan. I would probably keep my 18" WSM, but I'm liking the idea of a mostly set it and forget it at this point. I've smoked a lot on both my 18" and 22" WSMs, but might be ready for something different. I appreciate the comments, and I'll give the WSK a look again. It's...

    Searwood - Yea or Nay?

I think I'm going to make a decision on a pellet grill soon. I currently have an 18" and 22" WSM among several kettles and a gasser. A blunt question...does anyone who has purchased a Weber Searwood regret their decision? I know I won't get the flavor of a stick burner, but I don't want to...

    Anyone with Florida Keys Experience?

What can I say? I can fish anywhere. I found those two sites extremely interesting, especially when one is a former President of the United States.

    Anyone with Florida Keys Experience?

My wife and I were in Key West back in May, arriving on a Saturday and leaving Thursday. For us that was a little too long, so I think you're couple of nights sounds right. If you like history, we found Hemingway's house and Truman's Little White House very interesting. Sloppy Joe's...

    Spaghetti squash two ways

I really like spaghetti squash, in fact we made a meatless spaghetti squash “baked ziti”-type dish yesterday for supper. I’ll be interested to see your shrimp-squash dish.

    Anyone ever seen beef cheeks?

They are supposed to be great for tacos. I’ve not been able to find any. Malcom Reed and Matt Pittman have YouTube videos making tacos with them.
