    Live oak wood

The famous Santa Maria Tri Tip is always said to be grilled over Red Oak but that red Oak is actually (quercus agrifolia) which is commonly known un California as Coastal Live Oak. It must be really good when you live where you can go on your first camping trip in early March. I applaud you. I still have to wait several weeks for my first camping trip of the 2016 season.

    New RED Weber Q1200 review

After getting years of use and enjoyment from my old Weber Q100, I decided to retire it and get a pretty new Q1200. Long smoked spareribs on the Baby Q100-No kidding.

It was one rack of St Louis spares cut in half. I cooked them at the lowest setting with a foil tray pre-loaded with Maple chips. It smoked great for over 2 hours. I found the smoker boxes at a local market for just .50c each and they're reusable too. The Baby Q is just "barely" big enough for...

Long smoked spareribs on the Baby Q100-No kidding.

Using a mismatched pan & rack I smoked the St Louis spares for 2.5 hrs before foiling and finishing. They came out almost as good as my Kamado cooked spares.
