    pulled pork for 75

1.) Can I fit enough butts on my WSM to feed 75 people? I assume that there is a portion/person average that someone would be willing to share that would be helpful in answering this question. 2.)What is the maximum capacity of servings you have gotten on one smoker and what strategy did you...

Raspberry Chipotle BBQ Sauce - here's one, and looking for recipes

Keri, Are most of the raspberry chipotle sauces you have tried somewhat similar in their characteristics? I had some for the first time this weekend and really enjoyed it.

    "Catering" gig

The dinner was a success. I cooked WAY too much pork (there is a whole butt for leftovers!), but it was good. I served the pulled pork with Steve Petrone's No. 5 and Vinegar sauces (quite tasty) for some variety. Sides were Keri's hog-apple baked beans and a potato salad with bacon/mustard...

    first go at mr brown

Warn your dad of "plateau" while you are at work. I did my first Mr. Brown and did expect for my internal temps to level off at certain points. Mine leveled at 170 and I panicked. Later, with information from the folks on the board, I found out that this was to be expected. And like Dennis...

    "Catering" gig

Thanks, Rich. Based on your estimate, one 8 ought to do it. I think I'll probably up-size so I can grab the leftovers. Mom has enjoyed the "Mr. Brown" pulled pork and has been more than willing to pay for groceries. And, yes, these are women of a certain age...

    "Catering" gig

My mom has asked me to cook a couple of butts for a social she is having. I'm thinking 2 8 pound butts for her party and of 8 and some leftover for me and the family. Is that overkill in thinking? I know, you can't have enough pulled pork, but she is paying for the food. Also, would 2 8 lb...

    Hand Truck for Mobility?

John, Could you email me the pictures you have on the original mod link in a larger scale? I would like to see more detail of your project, if you don't mind. Thanks in advance for your trouble. You really have a great idea here. Donny

    Hand Truck for Mobility?

Daniel, Have you and John had any luck with his plans? John's plans are really good, but I would like to see someone's perspective as well before I attempt to create my own WSM Wheels. Donny

    Beer N' Q

Tony, How's your mead? In my days as a single man, my buddies and I used to drink a flagon (or two) of mead to celebrate the changing of the seasons. I think the Norse celebrated spring or summer, but we celebrated just about everything. Cheers!

    Bone In Boston Butt(s) timing.

Good posts on this topic. I did my first butt (8 lb.) 2 weeks ago. I, too, thought I was doing something wrong when my temps SLOWED at 175. I didn't know of the plateau. Also, my lid temp started out at 260-270 in the first couple of hours of the cook, but was smack on 245 when I got up in...

John, That is amazing! Did you ever put out any plans or are you still selling them on Ebay?

    Hand Truck for Mobility?

Has anyone ever tried to modify a hand truck dolly to use as a means for transporting your WSM? It looks like that something could be fabricated to sit under the cooker and then propped up onto a hand cart. Anyone tried anything like this?

    Keri's Hog-Apple Baked Beans

I ended up using one big can (28 oz) and one little (16 oz). I had a total of 44 oz of beans for 8 people, which turned out to be a very appropriate amount.
