    I agree with ralph. I've been making my own K Type Thermocouples for a while now, and have 1 on my smoker for the past 2 years without any issues. Thermistor based probes are much more prone to damage at higher heat, and can't really be repaired if damaged. Stick with the Thermocouple.

    Just go with a Roto-damper or Adapt-a-Damper setup. It's been proven here, and re-invented a million times. If you want to control the damper directly, there are settings that can do that.

    Not sure. Just go with the Pi Zero W. It's so easy. Don't need all that computing power of the Pi 3.

    I built the mini, and use a 15 CFM. Should be big enough for the double pan. My fan never runs at full soeed.
