    Brisket

Todd, When you're adding the charcoal to the smoker, is it all lit? Have you tried the minion method? Filling the ring with unlit charcoal then adding a handful of lit coals. You should easily get 12 to 14 hrs of steady temps with that method. Michael

First time with Brinkmann Pan, what gives?

Steven, I fired it using the Minion method. Same way I do with the regular water pan. During previous cooks, I would top off the water pan with 20 to 40 oz of water two to three times during a 14 hr cook. With the Brinkmann pan I added several gallons of water during the 14.5 hour cook. The...

First time with Brinkmann Pan, what gives?

Mike, Yes I did foil the pan, although I don't think that would make a difference. The only think I can think of is the Brinkmann pan sits so much closer to the coals than the regular pan does. Michael

First time with Brinkmann Pan, what gives?

I have been using the WSM for several months now and have done several butts using the regular water pan. I had planned to get the Brinkmann pan but hadn't gotten around to it, until last week. This past weekend, I was planning to cook a couple of Butts for a gathering on Saturday afternoon...

home depot hardwood charcoal briquettes, $3 for 20lbs

I bought a bunch at $2.99 but I'd buy it at $4.99 a bag. I'm really liking this stuff. I haven't done a long cook with it yet but I did some grilling. One thing I've noticed is I stay a whole lot cleaner with Rancher than with K. I have some chickens to cook tomorrow and some butts on Fri...

    A different "knives" question...

Rita, I should introduce you to my in-laws, they love their cleaver. They keep telling me it's better than my chef's knife and that it stays sharp - never gets dull. Little do they know that I hone and sharpen their cleaver quite frequently Michael

    A different "knives" question...

My recommendation would be to start out with a good chef's knife. One that's of good quality and comfortable in your hand. Cooks Illustrated likes the Forschner (Victorinox) Fibrox, Model 40520. It's an inexpensive light knife. Wusthof and Henckels knives are real nice but expensive. I have...

home depot hardwood charcoal briquettes, $3 for 20lbs

Eric W, The Edison HD had them in stock. They had one left when I got there and I took it. I then went to the South Plainfield HD and they had whole pallet full. Michael

    Lid Cleaning

It's probably just carbon buildup. Just clean it up with a brush and you should be good to go. Michael

    Is Home Depot discontinuing Weber??

I spoke with a guy in my local Lowes who's very knowledgeable about grills (been at the store a long time) about Weber products. He said he was very surprised they got so few Weber products in this year. His quote was "I don't know why we don't have much Weber this year, it doesn't make sense...
