    Thermocouple is resetting my HM

    You can use one of your other probes by DISABLING the thermocouple port. The next enabled port/probe will control the pit temp. This will get you by til your probe problems are resolved.

    If I remember correctly, the probe temperature floated high/low in jagged rolling arcs. It tracked the actual temperature if you averaged it out, but continuously floated +/- 30 degrees.     I have seen this exact behavior. The problem stayed with the probe when swapped. The Thermoworks probe was only a month old and had been used once before. They replaced it with no problems. New probe worked fine.

    Problem with longer Cat5 cables

    Why not use 22-awg cable instead of standard cat 5e 24-awg? They make 22-awg cat5e cable for long POE runs. You could also use 22-4 solid as used in standard alarm house wiring. 22-awg has twice the current carrying capacity of 24-awg and should definitely clear up any minor voltage drop issues.

    "Do I need a kettle?" Why of course you do. Where else would you put your 304 stainless charcoal baskets, your Vortex, or the other half a dozen Weber gizmos you have or will have?

    I used a 45 degree offset on mine. It's worked great with no heat issues.
