Just an update, I finally got around to adding plywood to the top and cutting out a 22" hole with my router and a homemade jig. I ended up buying a 60"x30" oak butcher block table that I'm going to mount next and route out a 21" hole.

How big of pain has it been to lift the center section and top in and out? Looking at yours, I'm considering just cutting it similarly to yours except doing it large enough to slide out the entire center section.

How'd you cut the whole so perfectly with the nibbler? It looks like the one you posted only cuts out to 11" or so? Just picked this table up and can't wait to do the same thing! Thanks!
