Cooked on the 22 with Hickory. Took about 12hrs @250. Let rest in Cambro 14hrs before Slicing

Haven’t made Ribs in a while so Cooked 3 Racks of St Louis Style Spare Ribs I guess they Smelled good because 3 different neighbors came over & asked if I’d sell them a Rack. Sold all 3 Racks & I didn’t get to eat 1 Rib!! Lol

Smoked Salmon w/Apple Wood. Cooked indirect till 135. Applied a Maple Bourbon Glaze for 10 more mins to 145 Best I ever made!!
