    What's on your menu?

    Typically we miss smoke day because we go to the beach the week before memorial day. However, somebody else reserved the place we stay. Today would be the day we would be heading back. I'm smoking a brisket today.

    Water Pan under Turkey

    We had our Thanksgiving this Saturday due to some relatives coming into town over the weekend. I smoked two turkeys on my Weber smoker using the basic brine. I tried to capture the drippings in the water pan but I mostly got fat and grease. I'm thinking cooking the turkeys in the 300 - 350...
