With doing these sous vide I would take them to 135 or so in the water bath then deep fry them which should easily carry them to 145 or so, with the bacon being pre cooked I would feel more than comfortable at those temps.

Wow that looks really nice, very interested in how you integrated the servo control for the damper into the system.

Honestly your best bet is to poke around the forums for a couple of releases and see which group you will mesh with the best. Most of the differences in releases are pretty meaningless for a complete newbie, just pick a release that is going to work with your hardware and jump in.

I have looked around quite a bit and have not been able to find any reference to what the three LED's are used to indicate. Did I miss this someplace? I am trying to decide what colors to order for my build and knowing the functions would help me decide on the colors... Thanks!
