I fired up my WSM with the minion method and lump charcoal from Costco on Thurs. nite at 7:00 pm. Started 2 pork butts & a brisket. Got to 225 degrees and held through the night. At 8:30 am in the morning food was perfect and temp was still 218, even with a rain shower. Decided to smoke 3 racks...
