I have ceramic briquettes in my water pan and love the way my WSM 22 cooks. I just cover it with foil before each use for easy cleanup.

I participated in my first WSM smoke day. I smoked a 15 lb packer brisket on my 22.5 WSM along with a 11 lb butt. Things went real well, everyone was happy, happy. The flat was on the dry side, but the burnt ends were on point - pun intended. cheers!
