We did beer can chicken for 4 hours at 250 deg with a foiled pan. I used the minion method with 2 baseball sized chunks of apple.

I was monitoring with a Maverick ET-732 on the grate and full hot water in the bowl. Used the Minion method with full charcoal.
I know I'm no where familiar with how the WSM behaves and just chalk up my heat problems due to user error and the unit being new.
I think part of my problem...
I purchased, some Cherry wood. All I could find. Was thinking 3 fist sized chunks.
I'll go easy with the smoke and hard on the home brew.
