    How well do WSM methods translate to offset?

    Rib rack

    I bought a couple of large rib racks at Academy which allow me to foil and put the ribs back in it in my 18.5 WSM. I can also bend a whole rack around and put each end in the rack, allowing me to cook two fulls racks vertical on each cooking grid.

    I haven't been closing the bottom vents. I had actually thought about it, but I was concerned I might put the thing out. The last time, I was using the IQUE so I turned it off and closed the damper. Thanks for the tip.

    I have the opposite problem. My WSM can be happily purring along at 275 and when I have to open it to make an adjustment (foiling) the fire gets a shot of extra air and the temp spikes up to 350-400 by the time I get the lid back on and I have problems getting it back down. This past weekend...

    That's what I eventually did. Closed everything off for ten minutes which had more of a choking effect than I expected. All that air apparently got all of the remaining fuel going at once, which meant that I had a lot more coals going than I should have. Lesson learned - put the lid back on...

    WSM and other weber covers don't fit anymore???

    Since I can't seem to find a cover for my "new" CL 18.5" WSM, would a 22.5 kettle cover work since the WSM is considerably taller but smaller in diameter? I just need something to keep rain water from running down the outside and getting in through the vents.
