    Hello From San Jose CA

    Born and raised in NC - been living in CA for quite a while now, missing the BBQ from my childhood. I don't get to visit the family in NC very often, so I decided it's time to add a smoker (WSM 18) to my gasser and learn to make what I love to eat! Looking forward to meeting y'all! Chuck

    Newbee question: Brisket on a gasser?

    Dave, thanks for the quick response. I originally thought I would do it indirect at 250 or so, with a water pan under the brisket, and chips in the smoker basket (built in). Would I be better to go with the higher temp, or is it possible/better to hold 250 in our nice 80deg San Jose weather this...

I'm sure this has been asked many times before, but I couldn't find an answer in my recent searches: Is is reasonable to try to cook a brisket low-n-slow on a Weber 2000 gasser?
