One finely chopped onion, 1lb okra, tips removed but not cutting into flesh, 1 tablespoon ground cumin, 1 to 2 tablespoons pomegranate molasses, finely sliced clove of garlic,seeds from half a pomegranate, tablespoon chopped cilantro.
Lightly fry onion in corn oil. Add cumin and stir until fragrant. Add okra and pomegranate molasses and garlic, stir, cover and cook on low for about 10 - 15 minutes, until the okra is tender. Add pomegranate seeds and cilantro, stir and serve.
