Any Users? The Field Skillet: Lighter, Smoother Cast Iron


 
Gene, that's a fine-looking skillet. I wish I could recall just where I read this - it might have been one of the Cook's Illustrated Equipment Reviews where they tested cast iron skillets. They said that they tested some lighter-weight skillets and found that they did not cook as evenly as the heavier models. I doubt this skillet was among those tested, however.

I'm sure that others here will give you more complete and better information, but at least the Cook's article will give you a good start. I'll be watching the comments here. My old standby 12" iron skillet has mysteriously been gaining weight lately.
