IR Thermometer

I'm looking to treat myself to a new, nice thermometer.

I considered the Thermapen, but thought a dual IR/instant read would be nice. I figure with the IR, I could check the lid temperature without sticking a thermometer through the top vent and regain the ability to open/close it again. I know I could put a whole in the lid and feed the thermometer through it, but I'm a coward.

Is the exterior surface lid comparable to the air temperature within?

I hear IR thermometers struggle with shiny surfaces, would the black surface count (it's a pretty shiny black) or are the issues more with stuff like stainless steal?

Anybody have one of these? Thoughts? Should I just go with the Thermapen?

I'm a fan of the thermoworks MTC. I like the fact that I'm investing in something that can be upgraded and the parts are interchangeable. And I was talking to a relative that works in a lab with thermocouples, and according to him, I'll be able to order stock K-type wire and build my own thermocouples for it. It might be more than most might want, but if you like to experiment and tinker (like me) its something to consider.
