hog head what to do with it

I recently purchased a whole hog. I want to smoke the head at some point in time. My question is what do i do with the brains and tongue and how do i get them out with out messing up the head.

Thanks for any advice you may have

I always roast whole hog head on.

To do alone, cut open in the back then remove the brains and tongue.
