Looking for non-nitrate bacon recipe

A family member can't have nitrate-added food, so I was planning on curing with plain salt vs. Tender Quick, etc. I realize I won't get that vibrant color, but that's fine.

Anything else to consider? I'm planning on slicing it after smoking and freezing everything I don't need immediately.
 
Just go ahead without nitrates. We've made smoked and non- smoked bacon this way for decades here in Scandinavia. Be sure to keep your hygiene standards high, and the salt will do the rest. Salting and curing, as well as low temps makes sure that your meat will stay fresh.
