any ideas on how to freeze/defrost potato kugel

We make potato kugel almost every week, and it would be so convenient to make a big batch in advance. It's basically a cake made from, ground potatoes, some fried onions, a bit of matzoh meal, eggs, and oil. The way we typically freeze it is, after baking it, covering the pan with foil, freezing it, and then rebaking it later, but the problem is, that after a month in the freezer, it tastes freezer burned and grainy when reheated. Yuck. What's a better way to store this long term? I have a foodsaver, if that helps.

Pinny, YEP! use the FoodSaver. It will protect the Kugel from freezer burn, and make re-heating a snap, in a pot of hot water.

Oh yeah. Just love kugel. Grandmother also used to put it into casings - excellent. She froze both but it got used before getting FB. Yep - vac seal and the problem will go away.

You really need to cool a casserole completely before covering with foil.
Condensation forms when foiling anything warm, which will give you freezer burn.
We do trays of Kugela that last well over 1 month.
